Great recipe! I followed the recipe to a T! Only thing different that I always do when making a bechamel-type sauce is heat the milk (and in this case, the chicken broth also) to almost boiling before I add it to the flour and butter. Awesome base recipe! I first boiled 2 chicken breasts in a brine mixture and simmered for 30 minutes. Then I shredded them and added the barbecue sauce. I kept it warm while the potatoes baked. I had enough chicken for 8 potato halves, so they ended up being very substantial for my family. I re-baked the potatoes and chicken mixture for about 10 minutes, then added shredded mild cheddar cheese on top, then baked for another 5 minutes. Once the cheese melted we added sour cream and chives when plating. Amazing idea! Thank you so much for the inspiration!!
I made this last night for my wife and son and they both gave it two thumbs up. I warmed the refrigerated chopped chicken in a bit (1c or so) of stock and when hot, drained the stock, added BBQ sauce until it looked sauced but not swimming, added some favorite seasonings and let everyone build their potatoes. We had leftover chicken and I only used the breast meat (it was a heavy Costco chicken).

Sweet potatoes take longer to cook in the Instant Pot. I plan to do some recipe testing for Instant Pot sweet potatoes soon, but in the meantime you might search for a recipe specific to sweet potatoes.
I did try sweet potatoes and added 1 minute to the cook time for med potatoes. They came out wonderfully. They were perfect. They melted in your mouth. This was my second use of the IP. Thanks for your recipes.
Hi Maria,No, you do not need to increase the cooking time for more potatoes. You only need to increase Instant Pot cooking time when the items are larger around or thicker as I discussed in this recipe.
Question. Using this recipe for dinner tonight. Is it ok to add 6 potatoes to pot If so should I add a little more water in bottom and/or increase cook time by a minute or two Thank you! Happy New Year!
The cook time is determined by the size (thickness) of the potatoes as described in the recipe not the number of potatoes. Whether you can fit them all will depend on the size of your pressure cooker. Do not fill past the maximum fill line marked on the inner pot or described in your manual. Use the same amount of water.

My family and I really love this recipe. I did not change a thing. The chicken was juicy and savory and the onion and sweet potato combination went perfect. I added some pan cooked baby spinage in a Lil olive oil as another veggie.. Delicious and healthy!!
I used boneless chicken thighs. Didn't have wholegrain mustard so I used French's honey mustard. Added some grated ginger to the marinade as well as the sweet potatoes. I also added one white potato and a handful of green peppers. For my salad, I added some kale, tomato, a date an some parsley. Everything tasted delicious. However, it was not very filling. My sweet potatoes finished quickly and I had to look for another side to go with the chicken. Does healthy mean still hungry
Great recipe, easy and tasty. I can't stand sweet potatoes so.used regular russet and they were outstanding. I also.doubled cooking time, turning.down the oven to.350 after 45 degrees, and then roasted for another 45 minutes.
